Zen Waffles Partners with Onego Bio to Enhance High-Protein Waffles

Zen Waffles, based in New York, has joined forces with Onego Bio in a new commercial collaboration aimed at incorporating Onego Bio’s innovative Bioalbumen ingredient into Zen Waffles’ line of high-protein waffles. These waffles are available in a range of flavors, including classic, chocolate chip, blueberry, coconut, and white chocolate strawberry.

The key ingredients in Zen Waffles’ high-protein waffles include cottage cheese, eggs, egg whites, almond flour, monk fruit sweetener, casein protein, vanilla extract, potassium sorbate, and baking powder. The classic, blueberry, and coconut varieties contain 23 grams of protein, while the chocolate chip flavor boasts 28 grams of protein.

Onego Bio’s Bioalbumen is a plant-based egg protein produced using precision fermentation with the filamentous fungus, Trichoderma reesei. This innovative ingredient serves as a non-animal alternative to traditional egg protein, offering similar functionality while meeting the evolving needs of food manufacturers.

Eugene Komissarov, co-founder of Zen Waffles, expressed excitement about the partnership, stating, “Bioalbumen provides a high-quality protein source that helps us create nutritious and satisfying products that our customers love.”

In recognition of its safety and efficacy, Onego Bio received a “no questions” letter from the US Food and Drug Administration in 2025, affirming the Generally Recognized as Safe (GRAS) status of its egg replacer.

According to Maija Itkonen, co-founder and CEO of Onego Bio, egg protein plays a vital role in the texture and flavor of waffles, providing structure and supporting browning while delivering essential protein. She emphasized that Bioalbumen offers a versatile solution for food manufacturers seeking to meet the increasing demand for high-protein products.
