Italian Sausage and arugula are two of my favorite ingredients, making this recipe for Spaghetti with Sausage and Arugula one of my go-to choices for a quick dinner. With the addition of garlic, a touch of lemon, and freshly grated Parmesan cheese, the flavors in this sausage and arugula pasta dish are simply delightful.
For years, I enjoyed this dinner with whole wheat spaghetti, plenty of sausage, and lots of arugula. However, I have recently discovered Palmini Pasta, made from hearts of palm, which has allowed me to experiment with a low-carb version of this recipe. The results were a huge success!
If you prefer a wheat pasta flavor with more fiber and fewer carbs, you can also prepare this tasty pasta dish with Fiber Gourmet Light Spaghetti. Alternatively, you can stick with whole wheat spaghetti if carbs are not a concern for you. (Nutritional information is provided for the Palmini Pasta version, but details for Fiber Gourmet Light Spaghetti or Whole Wheat Spaghetti can be found in the recipe notes.)
