These salmon tacos are an absolute delight!

The other night, I served them (again), and as I placed the sheet pan of salmon on the table, my entire family eagerly dug in, grabbing pieces with their hands and forks. It was a feast.

We adore salmon for its nutritional value and protein content, and when cooked perfectly, it effortlessly flakes into juicy, buttery pieces.

However, the real star of this dish is the mango corn salsa.

The salmon itself is kept simple with just taco seasoning, allowing the salsa to shine. The salsa is so irresistible that you may find yourself lingering at the table, scooping up extra bites long after finishing your tacos. In fact, it’s so delicious that it could easily pass as a salad on its own.

I firmly believe that salmon and mango are a match made in heaven.

Each bite offers a delightful crunch from the raw sweet corn and cucumber, along with bursts of juicy flavor from the mango. The combination is both adventurous and familiar enough that even my young kids happily devour it alongside us.

While I typically enjoy a variety of sauces on my tacos (okay, on all my dishes), these tacos require just a touch of lime and honey to elevate the flavors. It’s a simple yet incredibly delicious combination that requires minimal effort.

  1. Prep: Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Season the Salmon: Toss the salmon with the taco seasoning and avocado oil until well-coated – you can do this in a bowl or directly on the baking sheet. If your taco seasoning does not have salt, add some salt to the salmon.
  3. Bake the Salmon: Bake the salmon for 8 minutes, close to the top of the oven, or until it slips apart easily when pressed with a fork. 
  4. Make the Salsa: While the salmon is baking, chop up your salsa ingredients and toss together in a bowl. Season to taste.
