It’s Christmas morning in the U.S and I hope all my readers who celebrate will have a wonderful day with family, friends, and plenty of good food! And if you want a festive dish to serve during the holidays that’s extra easy to make, I’m encouraging you to make you this delicious Holiday Chicken Salad that has so many amazing flavors! This delicious red-and-green salad that uses rotisserie chicken is tasty enough to serve as a special salad during the holidays.

And one time when we made the salad with chicken, red pepper, and avocado, we hit on the idea of adding a touch of Feta, which made this salad made with rotisserie chicken even more of a wow. I love the idea of an easy recipe like this to make during the holidays when red and green food is so fun, but please, please, please do try this salad if you like these ingredients, no matter what time of year it is! Trust me when I say this recipe is completely a winner.

Can you make Holiday Chicken Salad without Cilantro?

For anyone who doesn’t enjoy cilantro, just use a bit more thinly-sliced green onion in the salad and it will still be delicious.

Can you make Holiday Chicken Salad without Feta?

If you’re not fond of Feta, just leave it out and you’ll still have a tasty salad. This salad was adapted from Chicken and Avocado Salad that’s been such a hit on the blog, and you can’t go wrong with that salad either if you need ideas for rotisserie chicken.

How to Make this Holiday Chicken Salad:

  1. Cut up enough rotisserie chicken to make about 4 cups. I made the chicken chunks rather large, take your choice on that.
  2. Chop up a large red bell pepper.
  3. Finely chop the cilantro and slice the green onions on the diagonal. (Just use more green onion if you’re not a cilantro fan!)
  4. Dice two avocados and toss with 1-2 tablespoons of lime juice.
  5. Whisk together the mayo, lime juice, and Vege-Sal (or salt) to make the dressing. Cut up the Feta into small cubes (or crumble if you prefer.)
  6. Toss together the chicken, chopped red bell pepper, and sliced green onion. Toss the chicken mixture with the desired amount of dressing.
  7. Then gently fold in the chopped cilantro.
  8. Then very gently fold in the Feta cubes and chopped avocado.
  9. You can season with a little salt if you’d like, but remember Feta is pretty salty if you’re using that.
  10. Serve right away or chill for a few hours.
  11. This will keep in the fridge for 1-2 days, although the avocado gets softer in the fridge, and of course it’s best freshly made.
