Baba ghanoush originates from the Levant region (Israel, Lebanon, Jordan, Syria). It is prepared with charred eggplant (aubergine), generous amounts of olive oil, lemon juice, and usually tahini along with various seasonings. The eggplant can be roasted in the oven or charred on a BBQ.

Below is my simple recipe for a small batch of baba ghanoush. While some recipes include yogurt or cream, I find it to be delightful and perfectly light without dairy.
