During my recent trip to Ukraine, I had the opportunity to explore Georgian cuisine, which quickly captured my interest. While I adore Ukrainian dishes like vinegret and borscht, it was the flavors of Georgian food that truly stood out to me.
I’ve already created a paleo-friendly version of the famous Georgian garlic chicken, and now I’m excited to share my take on the Georgian salad with walnut dressing.
This salad, similar to a Greek salad but with a unique twist, is a staple in Georgian restaurants. Instead of the usual feta and olive oil dressing, it’s dressed with a rich walnut dressing and garnished with fresh herbs like coriander and parsley. Simple to prepare yet bursting with freshness and flavor, I’m sure it will become a favorite in your household.
Georgian Salad Recipe Tips
While traditional Georgian recipes don’t typically involve blending the dressing into a creamy sauce, I decided to add my own touch with this velvety dressing.
If you don’t have a blender or food processor, you can finely chop the walnuts and garlic and mix them with the other dressing ingredients.
For those with nut allergies, almonds, hazelnuts, or a mix of seeds can be used as substitutes for walnuts.
I used crisp cucumbers, tomatoes, and an abundance of fresh herbs in this salad, but feel free to customize it with additional ingredients like salad leaves, radishes, red peppers, or carrots. For added protein, grilled chicken or salmon can be incorporated to turn it into a complete meal.
