Thanksgiving is over but the refrigerator is still full of leftovers. Are you tired of turkey sandwiches? This casserole is the perfect dish you can make with all the leftovers in your fridge.
Grab the leftover turkey, gravy, vegetables, and a box of stuffing. This casserole is quick and can be ready in under 40 minutes.

Recipe Notes:
- We are using leftover turkey from the holidays, but you can use shredded chicken and substitute the turkey gravy with chicken gravy.
- If you want a more liquid consistency, then I recommend making only 1 box of stuffing. If you do this, only use 1 1⁄4 cup of water and 4 tablespoons of butter.
- The more time this casserole rests, the more the stuffing absorbs the liquid.
- If you have leftover turkey gravy, you can use that in place of canned gravy.
- You do not have to add salt to this dish. The turkey, stuffing, and gravy bring in enough salt, so you do not have to add any more.
Store leftovers in an airtight container in a refrigerator for up to 3 days.
I used the carrots and celery leftover from the vegetable platter, but if you have leftover green beans or even broccoli, you can add those to the casserole dish.
Country Turkey Casserole
- Preheat oven to 400 degrees. Spray a 13×9 casserole dish with non-stick cooking spray.
- In a mixing bowl, combine cream of mushroom, turkey gravy, thyme, black pepper, diced vegetables, and turkey cubes.
- Pour mixture into the casserole dish.
- Add water and butter to a saucepan over medium heat. Bring water to a boil. Add in stuffing and stir.
- Remove stuffing from the stovetop and spoon half of it into the casserole. Add the remaining stuffing on top.
- Bake in the oven for 30 minutes.
- Remove from the oven and let sit for 5 minutes before serving.
