Ingredients in these Caesar Salad Chicken Sandwiches:
Welcome to a choose your own adventure recipe! And by that I mean: this recipe can be as complicated or as easy as you want. I’m providing everything you need for the DIY chicken version, and the quicker options too!
Here are the ingredients I used for this sandwich – the version made with stovetop cooked chicken breast:
- boneless skinless chicken breasts – The chicken recipe for this sandwich is a version of my Thin Sliced Stovetop Chicken Breasts. Look for thin sliced chicken at the grocery store. The other option is using two larger boneless chicken breasts and then slicing them in half into cutlets.
- brown sugar, garlic powder, onion powder, salt & fresh ground black pepper – These are our simple seasonings for the chicken. Adding a sprinkle of sugar helps with browning and a hint of sweet to offset all the savory flavors in the Caesar dressing and parm.
- extra virgin olive oil – Useful for helping the seasonings stick on the chicken and to oil the pan for cooking.
- ciabatta style rolls – Who doesn’t love ciabatta bread, especially toasted? Trader Joe’s sells an incredible baguette version. However, any burger buns will work great.
- parmesan cheese – I highly recommend freshly shredded parmesan for the best flavor, but if you must, pre-shredded will work too!
- lettuce – Either shredded romaine (I do large/rough shreds for a sandwich like this) or gem lettuce with the wider leaves. Use your preference.
- Caesar dressing – There are options here: homemade classic with anchovies, homemade vegan, or literally any bottle of Caesar dressing from the store.

Equipment you’ll need to make these sandwiches:
There are a few pieces of equipment you’ll need to make this recipe, specifically the chicken. Here are my recommendations:
- sharp chef’s knife – If I had to pick one thing in my kitchen to use forever, it would be my Misen Chef’s Knife (affiliate link!). This knife is super high quality while being affordable. I’ve had mine for years (and there’s a lifetime guarantee!).
- plastic cutting board – When handling, trimming or cutting raw meat, I usually use a plastic cutting board that can go into the dishwasher. Save the wooden cutting boards for produce and cooked proteins.
- tongs – Flipping and moving the chicken is best done with some tongs. To avoid scratching any of the nonstick pan surfaces, I almost always use silicone tipped tongs, like these OXO 9-Inch Silicone Head Tongs (affiliate link!).
- timer – This recipe gives the best results if you actually use a kitchen timer when cooking the chicken. This can be anything from a timer on your phone to an old fashioned kitchen timer if you have one!
How to make the Caesar Salad Chicken Sandwiches:
Level of difficulty for this recipe is what you make it: You could easily grab a bun, slap a hot crispy chicken patty on there, drench it in Caesar dressing and cover it in parmesan cheese shreds. This would be simple and DELICIOUS.
Another option: make your own Caesar dressing, follow the recipe start to finish for incredibly moist, perfectly cooked chicken, shred that cheese, all the things homemade (homemade ciabatta bread?! if you want).
I tend to fall somewhere in the middle. My thin sliced stovetop chicken breast method is so perfect, it’s my go-to for cooking chicken lately. I generally keep bottled dressings on hand, but I always freshly shred my parmesan cheese. See, there are options! And I’m gonna share a few of them with you.


Caesar dressing options:
There are three main options when it comes to Caesar salad dressing for this recipe:
- Classic homemade Caesar dressing: You’ll find our classic Caesar dressing in the recipe card for this Roasted Chickpea Caesar Salad.
- Vegan homemade Caesar dressing: You’ll also find a vegan Caesar style recipe in the notes section of the Roasted Chickpea Caesar Salad.
- Store-bought bottled Caesar dressing: I like Newman’s Own Creamy Caesar, but any you like will work!
Chicken options for this sandwich:
Here are the options for types of cooked chicken that can go on this sandwich:
- Follow the recipe as directed for a delicious thin sliced seasoned chicken breast patty without breading (so it’s not crispy but still delish) – a variation of this popular stovetop chicken recipe.
- Costco sells crispy chicken fillets that are perfect for a sandwich like this! If you already have those or something like it on hand, go for it.
- Chicken tenders made another way, like these Air Fryer Chicken Tenders, or whatever your family normally prefers!


How to make stovetop chicken for this sandwich:
For the stovetop chicken in this recipe, first make sure you have a pan that comes with a tight fitting lid and some silicone tipped tongs ready to go for cooking.
In a small bowl, mix the salt, brown sugar, garlic powder, onion powder, and fresh ground black pepper. I like to use the 1/2 teaspoon to stir and then sprinkle the seasonings on the chicken later too.
If there’s a lot of extra moisture (possible if the chicken was frozen and thawed), use a folded paper towel to blot the chicken breast cutlets and remove the excess moisture. After patting dry, drizzle a small amount of olive oil over the chicken.
Next, season each side of the chicken pieces with the seasoning mixture. Use your hands (or gloves) to rub the oil and seasoning all over each piece until it’s completely coated in spices and oil. Wash your hands and get your timer ready!
Heat a large nonstick pan with a tight fitting lid over medium heat. Once the pan is hot, add about 1/2 tablespoon olive oil and let it heat until shimmering in the pan. Place the seasoned chicken into the pan in a single layer (it’s okay if they touch a little bit) and set a timer for 5 minutes. Do not touch the chicken during this time!
When the timer goes off, first flip the chicken, and then quickly put the lid on. Turn the heat down to the lowest setting and again, set a timer for 5 minutes. Do not take the lid off or touch the chicken at all during this time.


When the timer goes off this time, remove the pan from the hot burner, but still do not take the lid off or touch the chicken. Keeping the steam inside is important. Set a timer for 5 minutes once again.
When the timer goes off this time, the chicken is done cooking and the internal temperature should read 160-165F. Let the chicken rest on a cutting board for at least 5 minutes before using it on these sandwiches or putting it into an airtight container with lid for later.
How to assemble this chicken sandwich:
While the chicken is resting, prepare the other ingredients before assembling the sandwiches:
- Cut and slice your bread, then use a toaster oven or conventional oven to toast it until golden brown to your liking.
- Optionally, add a heavy pinch of shredded parmesan to each half of the bread so that during toasting, that cheese gets all melty and sticks to the bread.
- Shred and wash the lettuce if not done so already. Store leftovers in a paper towel lined container with lid.
To assemble the chicken sandwiches:
- Spread a small spoonful of Caesar dressing onto each side of the split ciabatta or bun.
- Add piece of cooked chicken on the bottom half.
- Then add a heavy pinch of shredded lettuce, and more shredded parmesan.
- Stack the other half of the bun on top. Cut in half and enjoy!

Here are my best tips for making this sandwich recipe successfully in your own kitchen:
- Choose the recipe route that works best for you! For example, if you already have crispy chicken filets in the freezer that your family loves cooked in the air fryer, just go with that on the sandwich instead. You do you!

- dressing your way – The quickest way to these sandwiches is using store-bought dressing, and there’s nothing wrong with that! But if you want to make a homemade version, you’ll find two options here in this recipe for Roasted Chickpea Caesar Salad (one vegan, one with anchovies).
- sandwich add-ons – Add sliced avocado, tomato, hard-boiled eggs, or anything you’d normally add to a chicken Caesar salad!
- different bread options – After trying three different kinds, my favorite way to serve this sandwich is on the ciabatta baguette from Trader Joe’s, but anything would be good on that bread! It also served well on regular hamburger buns.

- Cook the chicken as directed in the recipe; let it rest, then store in the fridge.
- Shred and wash the lettuce, then store in a container lined with a paper towel in the fridge.
- Proceed with the recipe within the next 48 hours or so when you’re ready!


Is this recipe freezer-friendly?
For best quality, I do not recommend freezing any part of this recipe. It is possible to freeze cooked chicken, but I would serve it in another way (such as, diced up with a sauce) for best results. Freezing can affect moisture and texture of the chicken.
How to store leftover Caesar Salad Chicken Sandwiches:
If you’re planning to enjoy these sandwiches later, you’ll want to keep everything separated to preserve freshness and keep the lettuce crunchy.
- Store any shredded lettuce in an airtight container lined with a paper towel to absorb moisture.
- The cooked chicken can be stored in an airtight container with lid for up to 4 days. Best served cold to retain moisture.
- Be sure to wrap up the parmesan wedge tightly with foil or other food wrap.
- Keep the bread on the counter and use it up within 3-4 days depending on how fresh it was when you bought it.

- Prepare the chicken: Remove packaging from chicken breasts (1 pound or 3-4 thin slices), and place them on cutting board. Use a sharp chef’s knife to slice into cutlets if needed, and slice off any fatty pieces as well. If any pieces are over 1/2 inch thick, use the heel of your palm or a meat tenderizer to flatten. Let the chicken sit out at room temperature for at least 10 minutes while you mix the seasonings.
- Season the chicken: In a small bowl, combine the salt (1 teaspoon), brown sugar (1/2 teaspoon), garlic powder (1/2 teaspoon), onion powder (1/4 teaspoon), and fresh ground black pepper (1/4 teaspoon). Use a paper towel to blot the cutlets and remove excess moisture from both sides, then drizzle a small amount of olive oil (~1/2 tablespoon) over the chicken. Next, season each side of all pieces with about 1/2 teaspoon each of the seasoning mix. Use your hands (or gloves) to rub the oil and seasoning all over each piece of chicken.
- Cook the chicken: Heat a large pan with a tight fitting lid over medium heat. I prefer nonstick, but stainless steel will work too; just make sure you have a tight fitting lid.
- Add about 1/2 tablespoon olive oil to the pan and let it heat until shimmering. Place the seasoned chicken into the pan and set a timer for 5 minutes. Do not adjust the chicken during this time.
- When the timer goes off, flip the chicken and immediately put the lid on. Turn the heat down to the lowest setting, and again set a timer for 5 minutes. Do not take the lid off during this time.
- When the timer goes off, remove the pan from heat, but still do not take the lid off. Set a timer for 5 minutes once again.
- When the timer goes off this time, the chicken is done cooking and the internal temperature should read 160-165F. Let the chicken rest on a cutting board for at least 5 minutes while you prepare the rest of the sandwich ingredients.
- Toast the bread: Use a toaster oven or conventional oven to toast your ciabatta rolls (3-4, or 1 per serving). Optionally, add 1 tablespoon shredded parmesan cheese to each half of the ciabatta during toasting for some melty cheese that sticks to the bread. Toast until golden brown to your liking.
- Assemble the sandwich: To assemble, spread a small spoonful of Caesar dressing onto each side of the split roll, then add piece of cooked chicken on the bottom half, followed by heavy pinch of shredded lettuce, and more shredded parmesan. Stack the other half of the bun on top.
- Serve & store: Serve prepared sandwiches immediately with your favorite side, such as tater tots or something like this tortellini pasta salad. Leftover cooked chicken can be stored in an airtight container in the fridge for up to 4 days.
- For best results, avoid reheating the chicken so it doesn’t dry out. This thin sliced chicken can be enjoyed cold with toasted bread and is still delicious!

Ciabatta options: Pictured here is the ciabatta roll loaf from Trader Joe’s; it is excellent! Other burger buns you like would work. Naked Bread burger buns were good too.

This recipe was specifically written for boneless skinless chicken breasts. I would not recommend swapping for chicken thighs here unless you cook them in a different method.
