I have nothing against making chocolate cookies from scratch, but sometimes nothing beats the convenience of a box mix to cut down on ingredients. I’ve used a box of cake mix to get a headstart on everything from cake mix brownies to cookies. This time, I’ve traded cake mix for boxed brownie mix to make the most delicious brownie mix cookies. These chocolate cookies are rich, fudgy, and packed with chocolate chips, with soft-baked middles and crispy edges. With only 4 ingredients and one bowl, baking cookies doesn’t get easier!

What You’ll Need

  • Brownie Mix – You’ll need one box of your favorite store-bought brownie mix. I also have a homemade brownie mix I’ll use when I have some in the pantry.
  • Flour – All-purpose works best here.
  • Vegetable Oil – I recommend a neutral-flavored oil, like canola.
  • Eggs – I add an extra egg for a chewier cookie.
  • Chocolate Chips – Optional, but I can’t resist adding even more chocolate to these chocolate cookies! If you prefer, you can skip the chocolate chips or swap them for more add-ins like chopped nuts, M&Ms, toffee bits, etc.

How to Make Brownie Mix Cookies

The brownie cookie dough comes together in a few minutes. It does require some chilling, but the wait is more than worth it! Here’s how to make chewy chocolate cookies from brownie mix. Scroll to the recipe card for the printable directions!

  • Combine the ingredients. Make the dough by combining your brownie mix with the rest of the ingredients. Then, fold in any add-ins.
  • Chill the dough. Pop the cookie dough into the fridge to chill for at least 30 minutes. Chilling is important so that the cookies don’t overspread while they bake. Don’t skip this step!
  • Portion and bake. Afterward, scoop and roll the dough into balls. Arrange the cookies on a lined baking sheet and bake at 375ºF for 9-11 minutes until they’re set at the edges.
