I discovered this incredibly easy yet delicious cucumber salad recipe several years ago on a now-defunct recipe site, and it has been a staple in my summer menu ever since! With the arrival of cucumber salad season in Utah, I recently made this Cucumber Salad with Balsamic Dressing again and was reminded of how much I adore it.
The first time I made this salad was when I had cucumbers growing in my garden, and let me tell you, using fresh garden cucumbers takes this salad to a whole new level of amazing! As someone who is always looking for new ways to utilize garden veggies like cucumbers, squash, and tomatoes, the fact that I keep coming back to this cucumber salad recipe speaks volumes about its deliciousness.
I’ll be honest, the slightly sweet and tangy flavor of the creamy dressing, thanks to the mayonnaise, is what really sets this salad apart for me! I highly recommend giving it a try when cucumbers are abundant later in the summer.

Should you use White Balsamic Vinegar for this salad?
While I don’t mind the slightly brown hue from the balsamic vinegar, using white balsamic vinegar (affiliate link) would be a great choice for this balsamic cucumber salad if you have it on hand.
What gives the balsamic cucumber salad the sweet and sour flavor notes?
In addition to the sweet and sour notes from the balsamic vinegar, there are other ingredients that contribute to the delicious dressing for this salad. I sweetened the dressing with Monkfruit Sweetener (affiliate link) and used fresh-frozen lemon juice.

How to make Cucumber Salad with Balsamic Dressing:

- Use small Persian cucumbers that do not need to be peeled. Cut the cucumbers into uniform slices.
- Whisk together balsamic vinegar, mayo, sweetener, lemon juice, and garlic to create the dressing.
- Combine desired amount of dressing with the cucumbers, season with salt and black pepper, and serve!

Ingredients
- 8 mini cucumbers
- 1/4 cup mayo (see notes)
- 1 T best quality balsamic vinegar (see notes)
- 2 T Monkfruit Sweetener or other sweetener of your choice (see notes)
- 1 tsp. fresh lemon juice
- 1 tsp. garlic puree (also called ground garlic)
- sea salt to taste
- fresh ground black pepper to taste
Instructions
- Trim ends off the cucumbers, and cut into slices about 3/8 inch thick. (I didn’t peel the Persian cucumbers I used. If you have garden cucumbers you could cut some of the peel off to make strips, which would look nice. If you have waxed cucumbers from the grocery store, I would peel them completely.)
- In small bowl or measuring cup, use whisk to combine mayo, white balsamic vinegar (affiliate link), Monkfruit Sweetener (affiliate link) or sweetener of your choice, lemon juice, and garlic.
- Start with the smaller amount of sweetener and adjust to taste.
- Place the cucumbers in a serving bowl.
- Mix cucumbers with dressing, season with sea salt and pepper, and serve.
- For extra flavor, chill the salad for an hour or two before serving.
Notes
Use regular or light mayo, whichever you prefer. White balsamic vinegar can be used for a lighter dressing. Adjust the amount of sweetener based on the vinegar quality; start with one tablespoon and adjust to taste. Monkfruit Sweetener (affiliate link) is recommended, but feel free to use any sweetener you like.
